By 2011 I was really glad to say “times are a changing”. Major food companies were finally stepping forward and revising their food labels to include the words gluten free and or using gluten free ingredients. The food industry has the chance to play the role of the pharmaceutical industry by producing over the counter drugs (a.k.a. gluten-free processed foods) that are presently the only effective treatment for celiac disease. From time to time a different recipe will be accessible.

New research published in the American Journal of Gastroenterology indicates that about 1.8 million Americans have celiac disease (a severe autoimmune reaction to gluten). The celiac population will continue to grow given the fact-more than 1.4 million or 83 percent of the people with celiac disease remain misdiagnosed and or undiagnosed. As the population continues to grow, a gluten-free diet has the potential to become the new poster child for anyone who is looking to change their eating habits for the better or for a specific diet reason. Naturally gluten-free foods are best for celiacs and non-celiacs alike.
